They make the sweet potato biscuits and spread the tops of them just before they come out of the oven with with butter allowing the butter to melt down and spread all over the outside of the delicious homemade sweet potato biscuits.Or you can wait to spread them with the butter just after they come out of the oven.
I know a older African American Lady named Alice who made the first sweet potato biscuits that I ever tasted in my life. When she first started talking about sweet potato biscuits I wasn't that sure of how wonderful they would taste. And one of the best ways to serve sweet potato biscuits is to soak slices of country ham for a few hours covered in buttermilk and then wash your country ham off and fry it golden brown. While the country ham is soaking in the buttermilk you can get together the ingredients you need to make your sweet potato biscuits with.
Sweet Potatoes are about as southern as you can get. You should keep in mind that these sweet potato biscuits will taste perfect stuffed with fried country ham but they also will go great with almost any pork. I like them with pork roast seasoned with rosemary. I can almost taste the pork roast and the sweet potato biscuits right now. I have made these delicious sweet potato biscuits and sliced them open and melted a marshmallow in the center of each sweet potato biscuit. They are wonderful served with baked ham this way and they are oh so delicious.
When you prepare the cooked sweet potato to go in your sweet potato biscuits recipe run your cooked sweet potatoes through the food processor so they will mix very well into your sweet potato biscuit recipe.
Now let me talk to you. If your going to go to the trouble to make sweet potato biscuits and fry country ham don't use anything low fat in your biscuits. You want to experience the flavors of the most delicious sweet potato biscuits you will ever eat and below is the recipe you will want to use for your sweet potato biscuits.
If you are going to be doing a lot of baking in your oven you should equip your home oven with a heavy duty oven thermometer so you can be sure that your ovens dial is correct.
Sweet Potato Biscuits Recipe
1. 1/2 Cup Crisco Shortening Chilled.
2. 1/4 Cup Real Butter Chilled And Cubed.
3. 3/4 Cup Of Buttermilk.
4. 1/2 Cup Sweet Potato Peeled, Cooked, And Mashed.
5. 2 Cups Plain All Purpose Flour.
6. 1 Level Teaspoon Fresh Baking Soda.
7. 2 Tablespoons Sugar.
8. 1/2 Teaspoon Cinnamon.
9. 1/4 teaspoon Nutmeg.
10. Just A Pinch Of Ground Cloves.
11. 3 Teaspoons Baking Powder.
You need to have a large metal mixing bowl and one of the secrets of making these biscuits is to put your metal mixing bowl inside a large plastic frost to prevent frost from forming on it and put it in the freezer for 4 - 6 hours to chill it very well.
When your ready to make your sweet potato biscuits sift together the flour, baking powder, baking soda, sugar, cinnamon, nutmeg, cloves and the salt. You will need a large metal fork and your going to want to cut in the shortening, and butter with the fork until the mixture resembles course meal.
In a separate bowl you'll want to combine the buttermilk and the mashed sweet potato. Mix the two together very well and then mix it into the other bowl. Your dough will be very wet and you'll want to turn your dough out onto a well floured surface.
You'll want to knead your dough together until it starts to come together and you'll want to have a dough roller and a 2 inch biscuit cutter. Roll your sweet potato biscuit dough out until it is about 1/2 inch thick.
Cut your biscuits out with the 2 inch biscuit cutter and place the biscuits almost touching onto a parchment paper lined baking pan.You want your biscuits close together but they should not touch. You will want your oven to be pre heated to 400 degrees and you will want your biscuits to bake for 10 - 12 minutes until they are golden brown. When you take your sweet potato biscuits out of the oven brush them with melted butter.
You can make these sweet potato biscuits and cook them ahead of time and then freeze them by their self or stuff them with country ham and freeze them.

Wow. I can't use the butter or buttermilk because of a cow milk allergy, but my substitutes work well. They're not low fat, and they are tasty. These are a must try, and soon--thanks.
