Grilled Tomato Soup Recipe

We all know how good homemade tomato soup can be but how about taking it a few steps more and being able to enjoy the best tomato soup you will ever taste. Yes it really is that good. When you use grilled tomatoes , bell pepper , celery , onions , and mushrooms and a rich half and half cream you've entered a whole new dimension of culinary excellence.

You will want to start with a very clean grill and you will want to brush your grill with olive oil to prevent any sticking. You will want to start by putting your tomatoes on long wooden skewers and grill them on the grill until they are starting to get black spots on the outside and the skins are starting to slip off. Now you want to remove the tomatoes to a work area and remove the skins and place the tomatoes into a large bowl.

Left on the grill should be a skewer of mushrooms , a couple stalks of celery , a few bell peppers , and several half's of onion. You want your peppers to cook longer than any of the other vegetables and you may have to turn the peppers over several times. You want the peppers to cook and roast until their outer skins will slip off. Meantime you can remove the other vegetables to a large bowl. Once the peppers are done remove the outer skin and put the rest of the peppers into a bowl.

Now here comes the fun part. You want to puree all the vegetables in your food processor and be sure that you save any and all liquids. Pour it all into one big bowl. And you want to puree everything as fine as possible.

Once you have everything pureed as fine as possible pour it through a colander to remove any large pieces of vegetables. You can puree these again and then add them back to the vegetables. Add all the vegetables to a large stock pot and to that stock pot add.

1. One Small Bunch Of Sweet Basil chopped up fine.

2. Two Tablespoons of Fresh Minced Garlic.

3. One Teaspoon Sea Salt.

4. One Teaspoon Black Pepper.

5. One Teaspoon Ground Cayenne Pepper.

Stir to mix all your spices in well. Be sure that your fresh basil is chopped up very fine. This is very important. You can if you can't find fresh basil use a tablespoon of dry powdered basil.

You will now want to bring your vegetables almost to a boil but not quite. Then reduce the heat to a low medium. To the vegetables add a quart of half and half cream and stir well. Reduce the heat to a simmer and continue to cook so your flavors will blend well.

We are going to serve our grilled tomato soup over a very delicious corn bread. What you want to do is prepare your corn bread and serve a hunk of the corn bread in the bottom of a bowl with the grilled tomato soup poured over it and you can garnish the top with sour cream and chopped fresh basil.

Corn Bread Recipe

1. Two Boxes Jiffy Corn Bread Mix.

2. One 4 Ounce Can Green Chilies.

3. One 4 Ounce Can Red Pimento Peppers.

4. Two Large Eggs.

5. One Tablespoon Honey.

6. 1/2 Cup Whole Kernel Sweet Corn.

7. One Cup Whole Milk.

Mix all your corn bread ingredients together well and if it seems to dry to you add more milk. When you get it mixed well it should shake side to side in the bowl when you have it well mixed. Now you want to spray your baking pan well with a vegetable cooking spray very well and cook your corn bread in a 350 degree preheated oven until your corn bread is golden brown on top. And be sure to use the Jiffy Corn Bread mix as this really adds to the flavor of the corn bread.

Cut your corn bread out in squares that will fit in the bottom of your soup bowls and then serve your grilled tomato soup over the corn bread. Garnish the top with a spoon of sour cream and fresh chopped basil.

I guarantee you that if you will take the time to make the grilled tomato soup and the corn bread you will be rewarded with the most wonderful tasting soup that you have ever tasted.
