Vietnamese Grilled Chicken Sandwiches with Vietnamese Slaw
Here is my variation of a delicious Vietnamese Sandwich served in Vietnamese Restaurants all over the United States. These are so delicious I can almost taste them while I'm setting here writing this. You can easily make these sandwiches and your family and guests will wonder how you made something so delicious.
For your sandwiches you will need.
For The Chicken And Marinade
1. 6 Chicken Thighs with bones and skin removed.
2. 1/4 Cup Asian Fish Sauce.
3. 3 Tablespoons Fresh Lime Juice.
4. 3 Tablespoons Sugar.
5. 1 Tablespoon Minced Fresh Garlic.
6. 1 Teaspoon Sea Salt.
7. 1 Teaspoon Ground Black Pepper.
For The Sandwiches.
1. 1 Fresh Loaf of French Bread ( about 24 inches )
2. 8 Lettuce Leafs.
3. Vietnamese Cole Slaw ( Recipe Below )
4. 1 Large Ripe Tomato thinly sliced.
5. White Sweet Onion thinly sliced.
6. 4 Jalapeno Peppers thinly sliced.
7. 1 Large Cucumber Thinly Sliced.
8. 16 Sprigs Fresh Cilantro.
9. 16 Fresh Mint Leafs.
In a glass bowl pour your fish sauce , lime juice, salt, pepper, and sugar and whisk it up until the sugar is dissolved. Now add your chicken to the marinade and place it covered in the refrigerator for 6 hours and turn it about every hour to make sure your chicken gets well marinaded.
Cook your chicken in a skillet or on a grill until it is done. Once your chicken is done you will want to slice it thin to make it easier to eat in the sandwiches.
Just before you assemble your sandwiches cut your bread into 4 pieces and then cut each piece in half down the middle of each.
Now assemble your sandwiches with the slaw , onion , cucumber slices , jalapeno slices , tomato , Vietnamese Slaw , cilantro , and mint.
Vietnamese Slaw Recipe
This recipe will make about three cups of slaw.
1. 2 Daikon Radishes peeled.
2. 2 Medium Size Carrots peeled.
3. 4 Tablespoons Rice Wine Vinegar.
4. 3 Tablespoons Sugar.
5. 1 Teaspoon Sea Salt.
6. 1 Teaspoon Ground Cayenne Pepper.
You will want to cut your daikon radishes and your carrots into very thin match stick size pieces. Then mix all your slaw ingredients in a plastic bowl and cover and refrigerate over night before you use it the next day. This slaw makes your Vietnamese Chicken Sandwiches oh so delicious and tasty.

Hello Crazyhorsesgoat, looks and sounds absolutely delish!!!! As the chef of my clan, I tend to cook a lot of dishes from around the world, and make a mean Phillipino Green Chicken Curry, Phad Thai prawns, Penang chicken and so forth. I grew up with home baked bread, fresh produce grown in our garden, lots of vegies, fruit trees, pigs on spits, cabbage rolls, delectable home-made pastries, cakes and sweets, to name but a few things we like we like to make. I have my amazing and brilliant mother (Cheif Mati - as she is known to all, we just call her Mati for short.Dad is Cheif Tuta) In Serbian this is a loving term for Mum)to thank for passing these things on to the clan (amongst many other treasures of knowledge & nurturing.
