But if you have to use store bought tomatoes be sure to use ripe firm tomatoes for this great homemade gourmet dish.And when you slice your tomatoes you want to slice them very thin.
Tilapia is one of the newest white fishes to show up on the seafood market and it is one of the best tasting fish you will ever try. Tilapia can be cooked fried , broiled , steamed , baked and etc and most people who taste tilapia say that it is one of the best tasting fishes they have ever tasted.

In most supermarkets today you can usually purchase a bag or box of individually packed tilapia fillets. These are perfect as you can take out and thaw however many tilapia fillets you want to use. And tilapia is perfect for light cooking.
You want to use real Italian bread crumbs for this recipe and you'll want fine Italian Bread Crumbs as they will work best for your tilapia dish.
For Your Tomato Walnut Tilapia you will need.
1. Four Tilapia Fillets.
2. Salt and Pepper to taste.
3. One Tomato very thinly sliced.
Sprinkle your tilapia fillets with salt and pepper on both sides. Spray a baking dish with vegetable cooking spray and lay your tilapia fillets in the baking dish. Lay three very thin tomato slices over the top of each tilapia fillet.
For Your Topping You Will Need.
1. One Half Cup Fine Italian Bread Crumbs.
2. One Fourth Cup Fine Chopped English Walnuts.
3. Two Tablespoons Fresh Squeezed Lemon Juice.
4. Two Teaspoons Melted Butter.
Mix the above ingredients in a small bowl and place some of the mixture on top of each tomato slice. Bake in a preheated 350 degree oven for 45 minutes or until the fish and topping is golden brown. Lift your portions of fish out with a spatula to place on the serving plates.
And you have now prepared a delicious light cooking dish that everyone is sure to enjoy. I really like this dish as the flavors are just perfect.

Tilapia can also be used for a tamarind base soup dish. I will try your recipe. Can you use other nuts beside walnuts?
