Every fall as soon as cold weather gets started in I start thinking about making this chili which I call , " The Worlds Best No Beans Chili ". And once you make it and taste it you'll see why I do call it the worlds best no beans chili and most people who taste it say that it is the best chili they have ever tasted in their life. My family and friends make this chili several times a year and freeze it to serve at their cookouts with hamburgers and hot-dogs. But I just simply love a good bowl of the worlds best no beans chili as soon as the weather starts to get cold. With captains wafers there is no better no beans chili in the world. I like to garnish my bowl of chili with shredded cheddar cheese , fine chopped cilantro , and sour cream. And I just can't get enough of this great chili once the weather outside turns cold.

This chili is made with beef brisket as its base meat. You want to purchase a whole beef brisket at your local Wal-Mart or other Supermarket and you want to trim it of its fat and cut it into cubes like in the photo there to the right.

Your beef brisket will give your chili a rich delicious flavor that your not soon going to forget. And just like everything else some people think chili should never contain beans while other people as how can you make chili with out beans. Well this great chili does not contain beans and it is oh so delicious.

The Worlds Best No Beans Chili Recipe

The eyes of Texas are upon you. And if you make this chili I think you will truly discover that you have truly cooked the worlds best no beans chili. Don't scrimp on your ingredients and be sure to go to the extra effort to find a beef brisket and trim it up and cut it into very small cubes.

For Your Worlds Best No Beans Chili Recipe You Will Need.

1. One Pound Of Bacon Cut Into Very Small Pieces.

2. One Pound Of Red Sweet Onion Diced Very Fine.

3. Five Pounds Of Lean Trimmed Small Cubes Of Beef Brisket.

4. 1/3 Cup McCormick Chili Powder.

5. 1 Large Heaping Tablespoon Minced Fresh Garlic.

6. 1 Large Heaping Tablespoon Ground Cayenne Pepper.

7. 1 Tablespoon Cumin.

8. 1 Tablespoon Oregano.

9. 1 Tablespoon Ground Sea Salt.

10. 1 Tablespoon Black Pepper.

11. 3 Four Ounce Cans Green Chili's.

12. 3 12 Ounce Bottles Corona Beer.

13. 1 28 Ounce Can Diced Tomatoes.

14. 1 Teaspoon Coriander.

15. 1 Six Ounce Can Tomato Paste.

16. 1 Ounce Unsweetened Chocolate Very Coarsely Chopped.

If for some reason you do not want to use the beer then use 36 ounces of apple juice instead. The flavor will be just about the same.

Your chocolate needs to be chopped up fine and it deepens the flavor of this delicious chili and darkens the sauce.

You will want to start with a large skillet. In it you want to place your diced up bacon , your diced onion and your garlic. Cook until your bacon is well cooked and brown before you rake the skillet into a large stock pot.

Now you will want to add all your other ingredients and bring your large stock pot up to a boil. Then reduce your heat to a low medium and cook at least two hours stirring your pot up from the bottom often to be sure your chili does not stick. After two hours reduce your heat to a low simmer and cook two more hours stirring often up from the bottom of the pot.

Your worlds best no beans chili should now be done and ready to eat. Test it out by trying a couple pieces of your meat. It should be tender by now and starting to come apart. If its not tender keep cooking on simmer until your meat is tender. Add another 12 ounce beer or 12 ounces of apple juice if your chili gets to thick. If you want more hot add more ground cayenne pepper. I don't think the recipe needs anything but some people like to add more cayenne pepper. I like to add Texas Pete hot sauce to the bowl when I am eating the chili.

Serve your worlds best no beans chili with a garnish of shredded cheddar cheese , fine chopped cilantro , sour cream and I like to offer Texas Pete Hot Sauce on the side. Serve your chili in bowls over a square of Mexican cornbread for a extra tasty treat.

This chili recipe is easy and oh so tasty. Anyone should be able to make this recipe if you will just follow along with the recipe and cut your beef brisket up into small cubes like in the photo. Your chili you just made is excellent served with Mexican Corn Bread , Rice , Green Salad , Corn Tortillas , and plenty of your favorite cold beer.

Beans Or No Beans

This chili recipe was originally created by me to be served on Hot-Dogs and Hamburgers at Outdoor Barbecues. But then people started wanting a quart to take home and before long this chili made its way into the bowl and with the addition of captains wafers or other good quality butter crackers this no beans chili is one of the best things you will ever eat.

In the northern United States you will find chili served on hot-dogs and hamburgers that contains beans. But in the deep south of the United States serving chili with beans on a hot-dog or a hamburger is a big no no.

Add Beans If You Want To

No recipe however is written in stone. If you want to add beans to this chili then by all means add them. I would suggest two large cans of kidney beans added about half way through the cooking time so your beans do not become mush.

True but I have had several people ask me for a no beans chili and this is the best one ever as far as no beans chili.

A very good recipe. I didn't need so much, so halved it, but added masa for a little more thickness. I also put it in a crock for 6 hours on low heat. My taste leans more south, so I added 20% more cumin and floated sliced jalapenos. Beans?!

I so do not understand "no beans" chili...If a bean is added to a pot of chili, it ceases to be chili. It's still a great soup, but it can't be chili.

Also, it may be a big no no to add beans in the south...but in Texas, it is a hanging offense.

Just got home from the store with my stuff. There's one "change" that I'm making. You said "chocolate" but I am using Ghirardelli 100% cacao. I will come back and post on Sunday....

My husband and I made this chili today for a family get together. The chili was fantastic, but it is very spicy. Next time we make it, I will tone down the spices. By adding sour cream to the top, it cooled down the spiciness. Give yourself plenty of time to get this ready, as all that chopping does take time, but it is worth it. As to the question of how much does this yield, be aware that it does cook down a bit over the four hours, plus this is a rich chili so I'd say around 10 -12 servings. Thanks to the original poster for this great recipe!

i made this chilli last year in a cook off and place 3rd. i got beat by a grandma. this sat nov 12th 2011 i will re use this in the cook off and hopefully i will redeam myself

It is a wonderful chili and I have made it for several contests over the years and have won cash prizes and ribbons and trophies with it.

The flavor is just wonderful and if you like chili with beans wash and add a couple of cans of washed and well drained chili beans to the finished chili. But try the chili with out the beans. It is also wonderful on hot dogs and hamburgers or cheeseburgers.

I have a question I hope you can answer before Sunday! This sounds delicious. The only things that sound strange to me are the chocolate and the beer. What do these ingredients add? do i need the chocolate? I really dont like chocolate. Is the overall flavor of the chili sweet??? because I like my desserts sweet but not my meals. thanks!!

Yes you can use what ever meat you want. I've made it with hamburger, venison, and turkey.

Beer and chocolate add a lot of flavor and once they are cooked in the chili you really don't know they are there.

Do you brown the brisket with the bacon and onion or add it raw to the pot?I would like to use this recipe at the next American Legion Chili cook-off but use fresh Bhut Jolokia and Naga Morich hot Chili peppers.I also would like to substitute fresh long Cayene peppers for ground Cayene.Can you give me any advice on how much of these ingreadients to use and what if any ingreadients to delete from your recipe?I sat out the last cook-off to learn the ropes.I gave my friend the hottest peppers from my garden.He only got an honorable mention.Truth is it was too hot to eat.You could not taste the other flavors.I want to prove that these fine hot peppers can be incorporated into a great tasting no bean Chili.
