The Secret To Wonderful Chicken

For those of you who don't know I have been a Chef now for over 30 years and I've been the Executive Chef in some of the best restaurants in the southeastern United States. And one item that people every where just simply loved was chicken.

And while chicken is great I have spent many years in coming up with some great ways to enjoy chicken and some great ways to save money. And saving money is something we all need to do.

No matter what part of the chicken your recipe calls for you can use chicken thighs. Especially if your recipe calls for chicken breast try using chicken thighs. If you go to your local supermarket and check the prices you'll find that the price of chicken thighs is about 1/4 the price of chicken breast. So you see where I'm going don't you.

Now you will want to do some things to prepare your chicken thighs so that you can use them in any recipe. You will want to remove the chicken skin and then remove the bone from the chicken thigh.

Now you will want to go to your local Wal-Mart and purchase yourself a meat hammer used to tenderize meat with. With this hammer you can tenderize most meats so they will be tender when you cook them.

Lets assume you have purchased chicken thighs and you have already removed the skin and the bones. Now you will want to lay your chicken thighs on a flat surface like a cutting board and then cover your chicken thighs with a layer of plastic. Beat your chicken thighs flat with your meat hammer through the plastic to prevent any splatter or mess.

And you now have chicken that will be tender and you can use it for any recipe. But now I'm going to tell you another of my chicken secrets. Buy you a couple of bottles of the store brand of Italian Dressing and what you can do to have wonderful chicken is to place your tenderized chicken thighs into a plastic container and pour a bottle of your Italian Dressing over them. Cover your container with its lid or plastic wrap and place it in the refrigerator overnight.

The next day rinse off the Italian Dressing under cold running water and make the below chicken tenders with your marinated chicken thighs.

The Best Chicken Tenders You Will Ever Eat.

Now I'm going to tell you how to make chicken tenders that I guarantee you will be the best you have ever eaten.

You will need first of all to mix 2 cups of buttermilk with 4 large eggs in a large bowl. Be sure to use buttermilk as it does make a big difference. Use your electric hand mixer to mix up the eggs and butter milk very well and be sure to use a large enough bowl that you don't make a mess.

Now in another bowl mix the below ingredients.

1. 4 Cups Self Rising Flour.

2. 1 Cup Fine Italian Bread Crumbs.

3, 1 Teaspoon Ground Sea Salt.

4. 1 Teaspoon Black Pepper.

5. 1 Teaspoon Ground Cayenne Pepper.

6. 1 Teaspoon Ground Sage.

7. 1 Teaspoon Poultry Seasoning.

Mix all those ingredients up well in a large bowl being sure that all your ingredients are very well mixed. Now you want to cut your chicken up into finger sized pieces. Put your chicken into the milk / egg mixture first and then into the dry ingredients. Now your chicken fingers go back into the milk / egg mixture and back into the dry ingredients. You have now double breaded your chicken tenders and now you will want to fry them in 350 degree oil until they are golden brown and done. And you have now made some of the best homemade chicken tenders you will ever taste. Most people who taste these say they are the best in the world.

Delicious Chicken Taco's

Make the chicken tenders by the above recipe and once you get them fried allow them to cool slightly and then chop up a couple of cups of chicken tenders into bite size pieces so they will work well on your chicken tacos.

Now you will need.

1. 12 Hard Shell Taco's.

2. Shredded Lettuce.

3. Fine Chopped Tomatoes.

4. Fine Chopped Purple Sweet Onion.

5. Your Favorite Salsa.

6. Sour Creme

7. 4 Cheese Mexican Cheese.

Put your tacos together and serve. I have served these simple chicken tacos all over the world and they are always a big hit with everyone who tries them. Really what I usually do is set up a real simple bar with all the ingredients and let people put what they want on their chicken tacos. We usually served this in the bar area of the restaurants on Super Bowl Sunday and people just simply loved these.
