To start making this soup place the chicken and seasonings into the stock pot and cover with chicken broth. Cook until you know that the chicken is done and remove stock pot from stove. Use a ladle or scoop to catch out all your pieces of chicken. Put to the side and allow to cool.
Now skim the foam off the top of the pot being sure to get all you can and discard. Place your vegetables in the pot now and cook until done on medium simmer about 1 hour until done.
Now when the chicken is done skin the chicken and discard the skin.. Cut or pull the chicken off the bone and cut into small pieces like in the above photo.Return the chicken to the pot. Be sure to remove all the skin and all the bones. The skin and the bones have now done their job by adding a lot of delicious flavor to your soup.
The addition of sweet potatoes to this soup just vastly improves the flavor of this chicken noodle soup over any other recipe you'll try. Plus sweet potatoes contain a lot of important vitamins and anti oxidants.
In the last 30 minutes before you get ready to serve add the noodles to the soup and cook stirring until noodles are done. Serve with fresh chopped parsley garnish.
Any left over soup can be frozen in quart freezer cartons to pull out on a day when you need a meal in a hurry. Quite often I'll go ahead and make several runs of this soup and freeze it to be used for a quick meal on a busy day.
