No matter how old I get I still remember Sunday Dinner at Grandma's House. Usually we had fried chicken and the Colonel had nothing on Grandma. She made the best fried chicken in the world and it was Grandma Hattie who taught me how to make the best fried chicken in the world.

And I will share the secret of great fried chicken with you. It's really easy to make if you'll just follow the directions.

Grandma Hattie's Fried Chicken

You'll need a two to three pound frying chicken cut up into pieces. You can use legs or thighs if you wish. The first secret of this fried chicken is to mix two cups of buttermilk with two large eggs and beat it up well together. I sometimes put my buttermilk and eggs in the blender and blend it well. Then pour the blended buttermilk and eggs out into a large bowl.

In another bowl mix two cups of plain flour, one teaspoon of ground sea salt, one teaspoon of ground black pepper, and a pinch of ground cayenne pepper. Be sure to stir the mixture up well together.

Dip your pieces of chicken first into the buttermilk and egg mixture and then roll it in the flour mixture being sure to coat each piece of chicken well.

I cook my fried chicken like this in a big iron skillet with a lid but when I made it in restaurants I often deep fried it. You can cook it either way. In a big iron skillet with a lid you get a differn't chicken but its also wonderful deep fried.

If you fry your chicken in a pan resist the urge to turn your chicken too often. I usually only turn my chicken two to three times. You want to cook your chicken until the thickest pieces reach and internal temperature of 160 degrees.

I have had people tell me this chicken is better than anything the colonel ever made. At one Florida restaurant we cooked and sold over 250,000 pounds of this chicken in one year. So it must be good. Try it and let me know what you think.

Cream Chicken Gravy

To make this gravy you just about have to cook the fried chicken in a pan. Because you need four tablespoons of the drippings the chicken was cooked in to make your gravy in. This way is exactly how my Grandma Hattie and my Mom Virginia Walker made it.

You want four tablespoons of drippings in the pan and then you want to put the skillet over medium heat. Add four tablespoons of all purpose plain flour and stir well with a wire whisk until the flour is brown. Heat three cups of whole milk in the microwave and then gradually pour the milk into the pan while whisking the pan with the wire whisk.

Gradually add the hot milk stirring constantly until thickened. Add salt and pepper to taste. Pour up in a gravy boat or bowl to stop the cooking process.

This is the best cream gravy you will ever taste. Over a hot homemade biscuit there's nothing like it.

We always broke the green beans for Sunday dinner at Grandma's while listening to the Grand Ole Opry on the radio on Saturday evening. Now those were the days.

Green Bean Recipe

1. One Pound Fresh Green Beans.

2. Four Cups Water.

3. One Fourth Pound Salt Pork washed well and cut up in one inch cubes.

4. One Teaspoon Of Sugar.

5. One Teaspoon Of Ground Sea Salt.

6. One Teaspoon Of Ground White Pepper.

If your using fresh string beans you'll have to string your beans. Break them into one to one and a half inch pieces. Put four cups of water and the salt pork in a pot with a lid on it. Bring it to a boil and cook for five minutes.

Add your green beans and the rest of the ingredients and and cook over medium heat until your beans are done and cooked down. When your beans are done the salt pork should be done also. And you know know how to cook the best green beans you'll ever eat. Man I could eat these beans for breakfast.

Fluffy Mashed Potatoes Recipe

Ingredients For Your Mashed Potatoes

1. Four Pounds Of Peeled White Potatoes.

2. Eight Cups Of Water.

3. One Cup Of Milk.

4. One Fourth Cup Of Butter.

5. Two Tablespoons Mayonnaise.

Peel your potatoes and cut them up in large pieces. Cover them with the water and cook until the potatoes are done. Drain the potatoes of all the water.

Put the potatoes in a large bowl and mash them very well with the potato masher. Add all the other ingredients to the mashed potatoes and mix everything in very well. And you now have the best mashed potatoes you'll ever eat.

Great Buttermilk Biscuits

Buttermilk Biscuits Recipe

1. Two Cups All Purpose Flour.

2. Four Teaspoons Fresh Baking Powder.

3. One Teaspoon Ground Sea Salt.

4. Two Tablespoons Crisco Shortening.

5. Three Fourths Of A Cup Of Buttermilk.

You want to combine your flour, baking powder, and salt. Then cut the shortening in until the mixture resembles course meal. Now add your buttermilk, and stir until blended.

Turn your dough out onto floured surface and knead three to four times. Don't over work your dough. This is very important.

Pat the dough out to a one half inch thickness and cut your biscuits out with a biscuit cutter. Place on a greased baking sheet, and bake at 400 degrees for 15 to 20 minutes or until the biscuits are golden brown. You should end up with about a dozen homemade buttermilk biscuits. When you take the hot biscuits out of the oven brush the tops with melted butter.

Here were going to cheat a little bit but your still going to end up with one of the best tasting desserts ever. If you want your cake to have three layers use a yellow box cake mix and make yourself three layers.

Mix cut up strawberries with packages of strawberry glaze and put a layer of strawberry glaze between each of the layers of yellow cake. Spread it thick but not too thick. Finish up with a layer of strawberries and glaze on top of the cake and top that with cool whip topping. You want to chill this entire cake in the refrigerator before you serve it. I guarantee you that people will love this one. It has been served across the south for many years.
