Lets Make Peanut Butter Chocolate Chip Cookies From Scratch
When I make cookies or really do any type of baking I always use name brand products. When it comes to baking I really believe the name brand products provide you with a high quality product you won't get with no name or store name products. For instance I think smooth Jiff Peanut Butter makes the best peanut butter cookies.
Remember the old saying you get what you pay for. Well I think that's really true especially when it comes to baked goods. And these cookies deserve the very best because they really are the best cookies you'll ever eat in your life. You just need to be sure you have a glass filled with cold milk and use that to dip these wonderful cookies in.
Ingredients For Peanut Butter Chocolate Chip Cookies
1. One Half Cup Smooth Jiff Peanut Butter.
2. Two Thirds Of A Cup Of Light Brown Sugar.
3. One Half Cup White Granulated Sugar.
4. One Teaspoon Pure Vanilla Extract.
5. One Large Egg.
6. One Cup All Purpose Plain Flour.
7. One Teaspoon Baking Soda.
8. One Teaspoon Ground Sea Salt.
9. One Half Cup Old Fashioned Oatmeal.
10. One Half Cup Milk Chocolate Chips.
11. One Half Cup Dark Chocolate Chips.
12. One Fourth Cup Fine Ground Salted Peanuts.
I always buy Planters salted peanuts and use my food processor to grind my salted peanuts up to go in the cookie recipe. I use the metal blade in the food processor so the salted peanuts get well ground.
And the old fashioned oatmeal gives the cookies a taste you'll never get with quick cooked oatmeal. I use the old fashioned Quaker oatmeal because I love the flavor that oatmeal makes in these cookies.
Instructions For Making Your Cookies
You'll want to start by preheating your oven to 350 degrees and you'll want to make sure that it's at that temperature before you bake your cookies.
You'll want to use your electric hand mixer to cream together your butter and sugars until they are well mixed together and light and fluffy.
Now beat in your vanilla extract, eggs, and peanut butter. B sure that everything gets very well mixed together. Do this by making sure your beaters on your electric hand mixer get all the way to the bottom of the bowl your mixing your cookies up in.
Now mix in your flour, oatmeal, ground salted peanuts, and the chocolate chips and mix with the beaters until you know everything gets very well mixed together. It's very important to get all the way to the bottom of the mixing bowl with your beaters so that all the ingredients get very well mixed together.
Spray your cookie sheets with a good quality vegetable cooking spray before you drop the cookie dough by the tablespoon full onto the greased cookie sheets being sure not to get your cookies so close together that they run together.
Bake your cookies until they get brown on the edges but don't over cook your cookies. They should bake for about 10 - 12 minutes. Let the cookies set on the hot cookie sheets for five minutes before you carefully pick up the cookies with a spatula and set them down on wax paper where you have sprinkled white granulated sugar. Let the cookies cool on the sugar coated wax paper before you store them in a tightly covered container.
You can make these cookies ahead and put them into a container with a tightly fitting lid. You can put layers of wax paper between your layers of cookies in the container. These cookies can be made ahead and frozen this way for up to six months. When your ready to use the cookies allow them to thaw in the refrigerator in their covered container.
I like them hot from the oven with cold milk but I also often make cookies like this ahead and freeze them especially around the Christmas Holiday season.
A Variation On These Cookies For Some Delicious Bar Cookies.
You can make your cookie dough up just like above in the recipe and once you get the cookie dough made up spray a 13" X 9" baking pan with a good quality vegetable cooking spray and then pour that batch of cookie dough out into the prepared baking pan and smooth the dough out with a plastic spatula.Then shake the pan to make sure all is level.
Bake the bar cookies for about 25-30 minutes in a 350 degree oven until the bar cookies get light golden brown on top and they are done in the center. If the cookie bars feel firm in the center then they are done. If not firm they are not done.
Once the bar cookies are done set them out of the oven and allow them to cool for 15 minutes before you cut them out in 24 equal portions. Once these bar cookies are cut up and cool you can wrap each bar cookie in plastic wrap. You can store them in a tightly covered container or freeze them for later use. Just remember to thaw them in the refrigerator when your ready to thaw them. And there you have the best Peanut Butter Chocolate Chip Bar Cookies that you'll ever eat in your life.

Use Parchment Paper To Bake Batches Of Cookies Quickly.
When your baking many batches of cookies, save time by spooning out the dough onto sheets of baking parchment paper, assembly-line style. Then slide each batch of cookies onto a baking sheet when ready to bake. Using baking parchment paper eliminates the need to grease your cookie sheets. There is a new type of baking paper out now that has tin foil on one side and parchment paper on the other side. This new baking paper makes baking so much more fun and easy.

I used to skip the step in cookie recipes that called for chilling the dough, but I found out that chilling the dough makes the cookie dough much easier to work with. And your finished cookies will be a lot prettier. Now if I don't have time to chill the dough properly I put it in the freezer for 30-45 minutes and then proceed. Don't let it completely freeze though.

Don't use tub butter or margarine when making cookies. There is a lot of liquid in tub butters or margarine that is not in regular marine or butter. This explains why some peoples cookies won't get done or seem to fall apart. Your always better off to use stick butter or margarine in your baking.
Keep your mixing to a minimum when mixing up your cookie dough. You only want to mix it until all the ingredients are mixed. Don't ever over mix. Over mixing toughens your dough.
Use new cookie sheets that are shiny when ever you can. If the cookie sheets are dark they may absorb heat and burn your cookies on the bottom.
When you bake brownies line the baking pan with tinfoil extending the foil up about two inches on each side above the pan. When the brownies are done you can lift the brownies up and out of the pan and the clean up will be easy. This is how most professional bakeries make brownies.
Check cookies for doneness at the minimum baking time to promote even browning time. Cookies will continue to cook once you take them out of the oven and leave them on the cookie sheets. So keep this in mind when your baking cookies. Your cookies can over cook even setting on the counter on a cookie sheet.
