Oysters Bienville Recipe
This scrumptious delicious dish was first served in the big easy which we all know and love as New Orleans. Today Oysters Bienville is served in many New Orleans restaurants. And if you love oysters you have not lived until you try Oysters Bienville.
Oysters Bienville is named for Sieur de Bienville , Jean Baptiste le Moyne who was the founder of the wonderful city of New Orleans. Arnaud's Restaurant claims to have invented the dish 75 years ago but Antoine's claims to have invented this delicious oyster dish in the 1940's.

Now lets get down to making Oysters Bienville.
For your recipe you will need.
1. 3 Dozen Large to Extra Large Oysters on the half shell.
2. 6 Regular Pie Pans each filled with rock salt.
3. 4 Tablespoons Real Butter softened to room temperature.
4. 1/2 Cup Purple Sweet Onion minced very fine.
5. 1/2 Cup Green Bell Peppers minced very fine.
6. 2 Tablespoons Minced Fresh Garlic.
7. 1 Cup Finely Minced Green Onions including the tops.
8. 1 1/2 Cups Peeled and Deviened Small Shrimp with their tails removed.
9. 1 Cup Fresh White Button Mushrooms minced very fine.
10. 1/2 Cup White Wine.
11. 1 Tablespoon Fresh squeezed lemon juice.

13. 1 Cup Grated Cheddar Cheese.
14. 1/2 Cup Fresh French Bread Crumbs.
15. Salt , Black Pepper and Tabasco Sauce to taste.
You will want to start out by preheating your oven to 400 degrees.
You will now want to melt your butter in a saute pan and saute your garlic , onions , mushrooms , and bell pepper until your vegetables are tender. Add your shrimp and cook until barely pink.
At this point you will want to deglaze with the wine and lemon juice and bring to a boil. Now you want to add in your Bechamel Sauce , Cheese , and Bread Crumbs and turn your pan down to a simmer. Now add your salt , black pepper and Tabasco Sauce to taste. Let your ingredients simmer on low heat until it is very thick.
Now you will want to place 6 oysters on the half shell in each of your pie pans and with a large cooks spoon cover each oyster with your cooked mixture. Bake your oysters for 10 minutes in a 400 degree pre-heated pan. You want the top of your sauce to be brown.
In case your wondering the rock salt is just there for presentation when you serve each guest with a pan of the cooked oysters. This is one of the most delicious oyster dishes you will ever make and enjoy.

A friend once said about Maine Lobster, "There is no Bad Lobster". I feel the same about oysters. Having eaten them world wide, 2 of my favorites are from the States.
