I love this chili served over the top of a square of corn bread and I like shredded Mexican cheese, guacamole, and sour creme served in my bowl of chili. I quite often serve a crock pot of pinto beans on the side for people who like to add beans to their chili. I keep these pintos real simple seasoning them with a washed and diced piece of fat back that is about four ounces in size, some ground sea salt, and some freshly ground black pepper. I cut my fat back or side meat up into half inch cubes and stir it up into my pintos while they are cooking. What you want to do is cook the chopped up bacon in a skillet until the bacon is crisp. Take a spoon with holes and lift out the bacon and put the bacon into your stock pot. Put your onions and garlic into the bacon grease and cook until the onion and garlic is done.
Now add your cubed chuck roast into the pan with the onions and garlic and cook stirring often until the meat is brown on all sides. Now pour all the ingredients out into your stock pot and add all the rest of your ingredients to the stock pot stirring to insure that everything is very well mixed.
Now bring your stock pot up almost to a boil but not quite. Reduce the heat to a low medium and cook for about four hours until the chili is thoroughly blended and the liquid is reduced.
