Here is my favorite Banana Bread Recipe. Once you make this banana bread you'll wonder how you lived with out it all your life. I love it toasted and spread with smooth or crunchy peanut butter.
You Will Need For Your Banana Bread Recipe
1. 2 Cups All Purpose Plain Flour
2. 1 Teaspoon Salt
3. 1 Teaspoon Baking Soda
4. 1/2 Cup Of Butter
5. 3/4 Cup Of Light Brown Sugar
6. 2 Large Well Beaten Eggs
7. 2 1/2 Cups Over Ripe Mashed Bananas
Mix all of your ingredients together well in a large bowl with a hand mixer on low speed. You want the mixture to be smooth with no lumps. Now you will want to preheat your oven to 350 degrees. You will need a 9 inch X 5 inch loaf pan and you will want to spray it with vegetable oil spray. Put a tablespoon of plain flour in the pan and shake it around and then turn the pan over and tap it out. Pour your banana bread mixture into the pan and bake for 60-65 minutes until a toothpick inserted in the center comes out clean.
Some people like to add fine chopped pecans to this banana bread recipe. You will want to chop your pecans up and then put them into a zip lock bag. Put a tablespoon of plain flour in the bag and shake it up well. Now you can add them to your banana bread mixture and your now Banana Nut Bread will turn out perfect. If you don't flour the pecans or any kind of nuts you want to use they will all sink to the bottom of the pan while the bread is baking. Old Time Banana Cake Recipe
I remember my Grandmother making this cake while I was growing up and it still is one of my all time favorites. If you like bananas and banana bread you will love this cake. I have also included my recipe for banana bread below. But lets talk some more about the old time banana cake recipe. As a child I used to beg my Mom and Grandmother to make this cake. And if you ever make this cake and taste it you'll understand why.
You Will Need For Your Recipe
And keep in mind that all your ingredients should be at room temperature.
1. 1/2 Pound Unsalted Butter.
2. 4 Large Eggs.
3. 1 1/2 Cups Of Sugar.
4. 1 Cup Of Sour Cream.
5. 1/2 Cup Of Very Ripe Bananas, should be yellow with black specks.
6. 1 Teaspoon Baking Powder.
7. 1 Teaspoon Baking Soda.
8. 1 Teaspoon Vanilia Extract.
9. 3 Cups All Purpose Plain Flour.
You will want to cream your butter and sugar together and then add your bananas and mix until smooth. Be sure to add your eggs one at a time and mix well after you add each egg. Now you will want to add your sour cream, baking powder, baking soda, vanilia extract, and flour and mix together well until smooth.
You will want to use a electric hand mixer to be sure your cake is well mixed. Use the hand mixers low or medium speed while you mix your cake. You will need a 10 inch X 3 inch tube pan and you will want to spray your pan well with a vegetable cooking spray and then put one tablespoon of plain flour in the cake pan and shake it around. Turn your pan over and tap it to make the excess flour drop out. Now preheat your oven to 350 degrees and pour your mixed cake into the pan. You will want to bake the cake in the 350 degree oven for 25-35 minutes. Use a tooth pick if your in doubt if your cake is done. If you stick the tooth pick in the cake and it comes out clean your cake is done.
Now For Your Icing For Your Old Time Banana Cake
You will need for your Icing
1. 2 8 oz. Packages Cream Cheese at Room Temperature.
2. 1/2 Cup Butter at Room Temperature.
3. 2 Cups Sifted Confectioners Sugar.
4. 1 Teaspoon Vanilla Extract.
Mix all of your ingredients together very well in a large bowl with your hand mixer. Mix your ingredients together until they are smooth. Now when your cake is cool you can take a plastic spatula and put your icing on your cake. This icing is so delicious. I used to beg for the bowl when my Grandmother made this icing.
