Indian Butter Chicken Recipe

One of my all time favorite Indian dishes is Indian Butter Chicken. If its made right its one of the tastiest most delicious dishes on earth. If your looking for great Indian meal ideals you can't go wrong with Indian Butter Chicken.

I'm big on saving money and you can use chicken thighs in almost any chicken dish and their just perfect for most chicken dishes. The really great thing about chicken thighs though is that in most supermarkets they are 1/4 or less the cost of chicken breast. And in dishes like the Indian Butter Chicken people are not even going to notice that you used chicken thighs instead of the more expensive chicken breasts. And you can save the chicken thigh bones and the skin to make a delicious chicken stock for another meal. I keep a gallon bag or two in my freezer of chicken bones and skin just for this purpose. Add the chicken thigh bones and skin to a pot and then add a cup each of celery , onion , and green peppers and cook and you will have a delicious chicken stock in no time at all. You can skim out the bones and skin at the end and discard and use the chicken stock with the veggies in chicken dressing or a delicious chicken casserole.

But lets get back to Indian Butter Chicken. Oh man is it good. And the sauce yes the sauce. I just love the sauce from Indian Butter Chicken especially with jasmine rice. I quite often fry flour tortillas in a little butter and serve them fried up golden brown with my Indian Butter Chicken and jasmine rice.

For Your Indian Butter Chicken You Will Need.

1. Six Tablespoons of Real Unsalted Butter Melted.

2. 1/2 Cup Cashew Nuts chopped up fine.

3. 1/2 Cup Cilantro Leaves plus a few sprigs to garnish your plate with.

4. 1 Jalapeno with the stem removed and diced up fine with the seeds.

5. 1 Tablespoon Coriander Powder.

6. 1 Teaspoon Cumin Seeds.

7. 2 Teaspoons Ginger paste divided.

8. 2 Teaspoons Fresh Minced Garlic divided.

9. 1/2 Pint Half and Half Heavy Cream.

10. 4 Tablespoons Vegetable Oil.

11. 2 Small Purple Sweet Onions diced fine.

12. 2 Pounds Chicken Thighs with skin and bones removed.

13. 1/2 Cup Water.

14. 4 Tablespoons divided in half.

15. 1 Teaspoon White Granulated Sugar.

16. Salt and Pepper to taste.

17. One Pound Fresh Tomatoes peeled and diced up fine.

18. 1/4 Cup Tomato Ketchup.

You want to start with a large bowl and into this bowl you want to place your chicken cut into small pieces , 1 tablespoon of your ginger paste , 1 tablespoon of your garlic , and 2 teaspoons of your chili powder. You want to stir everything up well to get your chicken well coated.

In a skillet add your vegetable oil and fry your chicken over medium heat until done. Remove from the pan and set aside.

Now to your skillet while it is still hot you want to add your coriander powder , cashews , cumin seeds , and your chili powder. Stir almost constantly for about two minutes to blend everything together well. Now add in your diced onion and cook over medium heat until your onion is cooked and soft.

Now to your skillet you will want to add 1 teaspoon minced garlic , 1 teaspoon ginger paste , your diced up jalapeno , your chopped up tomatoes , your cilantro leaves , and cook on medium heat for about 10 - 12 minutes until your tomatoes are broken down. Stir occasionally.

Now you will want to add the mixture to a food processor or blender and add your melted butter and the half and half cream. Once you have it well mixed you will now want to taste and add salt and pepper to taste. If its not spicy enough for you add a few sprinkles of cayenne pepper.

Now return the sauce to the skillet and add your chicken and the tomato ketchup. You will want to cook over medium heat until the sauce reduces and thickens to your liking. Serve over cooked jasmine rice with fried golden brown flour tortillas. Sprinkle the cilantro leaves over the top as a garnish.

And I think once you make it that you will agree it is one of the best tasting Indian dishes you will ever taste. To me this is the best Indian Butter Chicken ever.
