For your recipe you'll want to use a 3 - 4 pound chicken. A tender young fryer will produce the most delicious garlic roasted chicken. You will want to make a garlic paste by mixing a large jar of minced or ground garlic with 1/4 cup of softened butter and mix it together very well.

You will want to rub your chicken very well both inside and out with the garlic butter you just made. Apply it heavily both inside and outside so the chicken gets coated well.

Place your chicken in a large baking pan and bake in a pre heated 350 degree oven until it is done about 1 1/2 hours. Cook your chicken until it reaches an internal temperature of 170 degrees in its thickest parts. Be sure to check with a meat thermometer.

Prepare a serving dish by placing a bed of rosemary and cherry tomatoes on the serving dish and then place your garlic roasted chicken on top of the rosemary bed. You may want to add the cherry tomatoes after you have the garlic roasted chicken on its rosemary bed.
