Hot Apple Soup With Mushrooms Recipe
If your looking for a wonderful soup that your sure to enjoy then , Hot Apple Soup with Mushrooms is one of the best soups you will ever get to cook and enjoy. You will need a food processor to make this soup with.
You will need Granny Smith Apples to make this soup with. You will want to peel your Granny Smith Apples and cut the apple meat off the apple cores. For this soup you will want to use a pound of fresh button mushrooms.
I like to make this soup in the fall and I quite often purchase a large pumpkin to turn into a large serving bowl for my soup. You can cut the top off your pumpkin and then clean your pumpkin out. Save the top of the pumpkin to use as a top for your pumpkin soup bowl.
For Your Hot Apple Soup With Mushroom Soup You Will Need.
1. Twelve Large Granny Smith Apples peeled and cut off.
2. One Pound Of Button Mushrooms.
3. One Cup Fine Chopped Celery.
4. One Cup Fine Chopped Sweet Onion.
5. Ten Cups Chicken Broth., use full flavored not low fat.
6. One Tablespoon Ground Cinnamon.
7. One Teaspoon Ground Sea Salt.
8. Two Cups Sour Cream.
9. One Teaspoon Cumin.
What you will want to do is combine all your ingredients in a large stock pot and bring it almost to a boil but not quite. Then reduce the heat and cook on a low simmer for about one hour.
Turn your soup off and allow it to cool down to room temperature. Now in small batches puree your soup in a food processor until you have run all the soup through the food processor.
Put all the soup back into the stock pot and bring it back up to a low simmer. You are now ready to serve your soup. You can serve your soup in the pumpkin that you prepared to serve it in. Or you can serve the , Hot Apple Soup with Mushrooms Soup in small individual serving dishes and garnish each bowl of the soup with Granny Smith Apple Sticks and chopped parsley.
Once you make and taste this wonderful soup I think you will agree that it is probably the best soup that you will ever taste. The flavors of the Granny Smith Apples and the mushrooms are oh so wonderful. Be sure that you use sweet onion in this soup.
When you purchase your chicken stock for this soup be sure to purchase full flavored chicken stock for your soup not low fat or fat free stock. You will want to be sure to use full flavored stock to get that wonderful flavor into your soup.
Keep in mind that sea salt will taste the best in your soup recipes. It is lower in sodium than regular salt and the sea salt will really jazz up your soups.
