Flourless Peanut Butter Cookies
As many of you know I have a thing for peanut butter. I love to cook with peanut butter and here is a really special recipe for flour-less peanut butter cookies. And I know I'm not the only one around here with a thing for peanut butter.
If you check around my Hub Pages you'll find out that I make all kinds of things out of peanut butter. Peanut Butter is one of the most wonderful inventions ever and I have discovered out how to make all kinds of wonderful desserts from peanut butter.
Keep in mind that these cookies come out of the oven puffy and loose really but they firm up as they cool. So be sure to allow them to cool to room temperature before you remove them with a spatula to plates. Serve them up with a great big glass of cold milk for a extra special treat.
You will want to preheat your oven to 350 degrees. And if your going to be doing a lot of baking you really need a oven thermometer to keep a eye on what temperature your oven is really at.
For Your Flourless Peanut Butter Cookies You Will Need.
1. One Teaspoon Real Vanilla Extract.
2. One Large Egg.
3. One Cup Granulated White Sugar.
4. One Teaspoon Baking Soda , be sure it is fresh.
5. One Cup Creamy Jiff Peanut Butter.
6. One Third Cup Salted Chopped Fine Peanuts.
In a mixing bowl with a electric hand mixer you want to add the egg , vanilla , sugar and baking soda and mix well. Next you will want to beat in the creamy peanut butter and then the chopped peanuts.
And guess what you just made some of the best peanut butter cookies you will ever eat. Serve your cookies with a glass of cold milk for a extra special tasty treat.
Now you will want to drop your cookie batter by the teaspoon full onto your cookie sheet and bake in the preheated oven until they are about the color of the cookies above. They will be puffy when they come out of the oven but they will settle down and firm up as they cool.
The salted chopped peanuts give the cookies a unique flavor you won't get with out them. You can try using crunchy peanut butter but the flavor just won't be the same.

And why not just use crunchy PB instead of adding chopped peanuts? I love crunchy PB!

How I managed to not see your cookie before is beyond me. I spent a year looking for just the right peanut butter cookie.....all failed some more then others. You are my super duper cookie hero! I made these 1/1/2011 then doubled the next batch and the following one as well. For a total of 5 batches in a few hours. Man oh man had to save a batch to keep here....thank you so much, my search is over for the perfect peanut butter cookie. Your cookies are now in the book I started just in case I die before my hubby. Only a few are good enough to go into it.
