Down along the Sea Of Cortez you'll find all kinds of little road side stands selling you guessed it wonderful tasting fish tacos and here I'm going to teach you how to make wonderful fish tacos that are going to have your family, friends, and guest saying wow!
Let me let you in on one of the big secrets of fish tacos. And that is you must use beer batter to bread your fish and one of the best fish to make fish tacos out of is tilapia. You can more than likely find tilapia filets in your super markets sea food section.
Below is a recipe for the best beer batter you will ever taste. It is just simply wonderful on fish or shrimp. Yes you can make shrimp tacos. Of course to make shrimp tacos you need shrimp with the shells and tails removed and they need to be deveined. Why not make both fish and shrimp tacos for your next dinner party. Or as a special treat for your family.
Beer Batter Recipe
To make the best beer batter your going to need.
1. One Cup All Purpose Plain Flour.
2. One Teaspoon Ground Sea Salt.
3. One Level Teaspoon Dried Oregano.
4. One Level Teaspoon Dried Powdered Mustard.
5. One Level Teaspoon Ground Black Pepper.
6. One Level Teaspoon Powdered Garlic.
7. One Cup Of Your Favorite Beer.
Put all your ingredients into a blender and blend very well. Then pour out into a bowl. If you have concerns about the beer don't worry. Your only going to end up with the flavor from the beer. All the alcohol will cook away while your cooking the fish.
You will want to have a home deep fryer you can cook your fish in. When you get ready to cook the fish cut it into finger size pieces and then put about one cup of plain all purpose flour into a bowl by its self. Now what you want to do is dip the fish pieces first into the flour and then into the batter and then into the deep fryer. Fry your fish pieces until they are golden brown and then place on paper towels so that your fish will drain well. You want to cook your pieces of fish until they are crunchy. This will taste best in the fish tacos.
Now you will want flour tortillas to make your fish tacos in and you will want to make the below recipes to use on your fish tacos.
White Sauce Recipe
1. One Half Cup Mayonnaise.
2. One Half Cup Plain Yogurt.
3. One Third Cup Of Fine Chopped Fresh Cilantro.
Mix all the the ingredients together and place in a covered bowl in the refrigerator to get cool. You want to serve the white sauce chilled.
Fresh Homemade Salsa For Your Fish Tacos
1. Three Cups Fine Diced Fresh Tomatoes.
2. One Small Sweet Onion Diced Very Fine.
3. Two Jalapenos Seeded And Stems Removed And Diced Fine.
4. One Half Cup Fine Chopped Cilantro.
5. One Teaspoon Sea Salt.
6. One Tablespoon Fresh Squeezed Lime Juice.
Mix all your salsa ingredients in a plastic bowl that has a lid and place in the refrigerator to chill well.
You will want to use finely shredded cabbage on your fish tacos and not lettuce. This is another of the secrets of our wonderful fish tacos.You will want several limes cut into wedges to garnish your fish tacos and also fresh cilantro.
When you get ready to put your fish tacos together put deep fried fish in the bottom of your flour tortilla and then a tablespoon of your salsa. Next comes some of the freshly shredded cabbage and then a big spoon of the white sauce. Garnish each fish taco with a few sprigs of fresh cilantro and a lime wedge. Serve on a plate with a small amount of sour creme and a small amount of guacamole on each plate.
