Oyster Tips
You should always serve raw oysters or oysters on the half shell on a bed of ice. Serve horseradish , cocktail sauce and crackers along with the oysters on the half shell. You can garnish your oysters on the half shell with fresh parsley.
You can place your oysters in the freezer for one hour before you go to shuck them and they will be so much easier to shuck. Just don't forget them in the freezer.
Remember that oysters are salty by nature so you won't need to salt most dishes that you add oysters to.
Size does make a difference. Your smaller oysters will tend to be more tender.
And be sure to always remember that when the edges of your oysters start to curl that your oysters are ready. Overcooked oysters will be tough and chewy.
Choose freshly shucked oysters for oysters on the half shell , broiling , or deep frying.
Thyme , Paprika , and Parsley will go great with your oysters. As will lemon juice , Tabasco sauce , and Cocktail sauce.

How To Shuck Oysters
Shucking Oysters does require practice to do it right. One of the things you'll really need is a good oyster knife or two. You'll also want a stiff brush and a towel to make it easier to shuck your oysters. It is true culinary art to be able to shuck oysters.
Start off by making sure that your oysters are still alive by making sure that your oyster shells are tightly closed. Discard any open oysters or oysters with a bad smell. Now you want to give all the oysters a cold water bath and scrub the outsides of the oysters shells with a stiff brush.
And now you can get down to shucking oysters. You will want to hold the oyster in the palm of your hand with a towel so that you won't accidentally cut yourself. And you'll want to work over a bowl so that you can save the oysters juices.
To open the oyster hold the oyster firmly in the palm of your hand and insert your oyster knife between the shells near the hinge and twist to open so the oysters muscles are detached.
Use your oyster knife to scrape the oyster meat from the top shell and add it to the meat in the bottom shell. Cut the oyster loose from the bottom shell and discard the shells unless you are serving oysters on the half shell or a similar dish.
And if you followed along closely you now have achieved the culinary art of shucking oysters.
Raw Oysters On The Half Shell
Oysters on the half shell are a delicious seafood delicacy. Look at the presentation in the photo above and drool. You will want to serve your raw oysters on the half shell with lemon wedges , cocktail sauce , and freshly grated horseradish. You can garnish your oysters on the half shell with fresh parsley.
1. Purchase fresh oysters and scrub your oysters under running water to get your shells nice and clean.
2. Place the live oysters in the freezer for one hour and then you can easily shuck your oysters.
3. Cut your oysters loose from the shell and place them in a bowl.
4. Wash the oyster shells well under running water to make sure they are very clean.
5. Place a layer of ice on your serving dish.
6. Place your oyster shells around on the ice and then add a oyster to each shell.
7. Serve your oysters with freshly grated horseradish , cocktail sauce , lemon wedges and garnish with fresh parsley.
Fried Oyster Recipe
I have been told by thousands of people over the years that I make the best fried oysters on earth. And now I'm going to share my recipe with you. I don't know about you but I eat for flavor and these oysters are filled with flavor.
The real secret of my oysters are that they are double breaded. That and the delicious combination of spices I use on these oysters is what makes these oysters the best fried oysters that you will ever eat.
For Your Oyster Breading You Will Need.
1. 4 Cups Plain All Purpose Flour.
2. 1 Tablespoon Black Pepper.
3. 1 Teaspoon Cayenne Pepper.
4. 1 Teaspoon Seasoned Salt.
Mix your ingredients together and be sure that you mix very well.
Mix four large eggs together very well with one quart of milk and mix together very well.
Now you will want to place a handful of oysters at a time into the dry breading and then place them into the milk / egg mixture and then back into the dry breading. Take the double breaded oysters out and place them onto a tray or plate. Refrigerate your double breaded oysters for at least one hour before you deep fry them in 350 degree oil. Fry until golden brown and then drain on paper towels. Serve your oysters with cocktail sauce and lemon wedges.

The only way I liked cooked Oysters is on a New Orleans Po' Boy, otherwise Shuck 'em up and serve them a dozen at a time with a really cold Beer, or better Ale. Chincaoteagues preferred except in New Orleans. David Russell
