Delicious Peanut Chicken
Peanut Chicken Recipe
Peanut sauce with chicken is all the rage right now and while I love peanut chicken I do not like to use the peanuts full size in the recipe so I came up with a slightly different version. Try it and see what you think. Please post a comment below.
1. 8 Skinless Boneless Chicken Breast. , Cut into 1"X2" pieces.
2. 2 Tablespoons Vegetable Oil.
3. 1 14 1/2 ounce can Diced Tomatoes.
4. 1 Tablespoon Fresh Minced Garlic.
5. 1 Teaspoon Fine Ground Ginger.
6. 1 Teaspoon Ground Cayenne Pepper.
7. 4 Tablespoons Peanut Butter.
8. Fresh Broccoli For Steaming.
In a large heavy duty skillet cook your chicken until done. Remove from the heat and set aside. Now add your tomatoes, garlic, ginger, cayenne pepper, and peanut butter to your skillet and cook for two minutes.
Return your chicken to the skillet and stir up in the pan. If your sauce is to thick add a little chicken broth.
Now steam your broccoli adding some butter and salt to your broccoli. When the broccoli is done place it on the bottom of a bowl or serving tray and pour your Peanut Chicken over it. You will want to make white rice to serve on the side with your Peanut Chicken.
