I can hardly wait every year for the fresh corn to get ripe. There is nothing like the taste of fresh corn just cut off the cob and cooked. You can buy corn on the cob now for most of the year in your local supermarket but there is nothing like going out and twisting the ripe years of corn off the stalk. I then take the shucks off and use a stiff kitchen brush to be sure I get all the silks off. Then I carry the corn in the house and use a sharp knife to cut the corn kernels off the cob. I then scrape the corn cob into the pot to get all the delicious juices into the pot with the corn.

Ingredients
1. Two Cups Instant Non Fat Dry Milk.
2. One Cup All Purpose Flour.
3. One Level Tablespoon Ground Sea Salt.
4. One Cup Butter.
In a large bowl, combine dry milk, flour and salt. Mix very well. With a large fork cut the butter in until the mixture resembles fine crumbs. Put in a container with a lid and label it white sauce. Store in the refrigerator and be sure to use with in two months. This will make eight cups of basic white sauce.

If you want to make the mix into white sauce mix one half cup of the white sauce mix with one cup of milk and what ever herbs or spices you want to add. You want to cook over low heat until smooth stirring constantly. This will make one and one half cups of white sauce.

Instead of milk use chicken broth to make the white sauce with and you'll end up with delicious cream of chicken soup.

You can make a wonderful cheese sauce by adding one cup of shredded cheddar cheese to the sauce after it thickens.You can use a ladle of this sauce in a pan of scrambled eggs or pour it over broccoli or cauliflower for wonderful veggies.

Do the basic recipe for white sauce above and after the sauce thickens add a teaspoon of curry powder to the thickened sauce and stir it in. This is a wonderful sauce to go on boneless deep fried chicken to make a quick chicken curry.

1. Six Slices Bacon.
2. Eight Ears Of Corn On The Cob.
3. One Large Sweet Red Or Purple Onion very thinly sliced.
4. Two Large Potatoes , peeled and cut up in small cubes.
5. One Cup Of The White Sauce Mix From Above.
6. One Teaspoon Ground Sea Salt.
7. One Teaspoon Ground White Pepper.
How To Make The Homemade Corn Chowder
You want to put the bacon slices in a deep skillet and cook until crisp and remove and set aside. Now add the thin sliced onions to the bacon grease and cook until they are done to the stage of being soft. Remove the onions and set aside. Add a tablespoon of vegetable oil to the skillet and now over low heat cook your corn and corn juices over low heat until the corn gets tender.
You'll need to keep the heat low and stir your corn often while its cooking. It will take about twenty minutes over medium heat to cook your corn. Now your going to want to cook your potatoes in a little pot just until they are done. Drain your potatoes and add all the ingredients you've cooked into a stock pot over a low simmer and cook for about thirty minutes longer to let all the ingredients blend and come together. You want to save the cooked crisp bacon to garnish your bowls of chowder with.
This makes the best homemade corn chowder that you will ever eat. With a green salad and cornbread you have a full meal. A very delicious meal. I have made the corn chowder this way and allowed it to cool to room temperature and then I run it through the blender to puree the chowder. Then I reheat it hot but not boiling before I serve it.
