Chicken And Oyster Gumbo With Andouille Sausage

Luckily you can now find Andouille sausage in the meat or deli sections of most large super markets. And with andouille sausage , oysters , and chicken you can make the best Gumbo you will ever taste and enjoy.

Lets talk about roux. The best roux needs to be made in a cast iron pot or skillet and it needs to be cooked until it is the same brown color as a old penny. You will want to start with one cup of plain all purpose flour and one cup of vegetable oil. You need to cook your roux over low heat stirring often until it browns but does not burn. Its important that you don't burn your roux. Once you get it brown remove it from the heat and set aside. 

You Will Need The Below Ingredients For Your Gumbo.

1. 4 Cups Chicken cut up in small pieces.

2. 2 1/2 Quarts of Chicken Broth.

3. 2 Pints Of Oysters.

4. 1 cup each fine diced and cooked celery , bell pepper , and onion.

5. 1 Pound Andouille Sausage cut into thin slices.

6. 1 Pound Frozen Raw Okra.

7. 1 Tablespoon Cajun Seasoning.

8. 1 Tablespoon Minced Fresh Garlic.

9. 1 Teaspoon Ground Sea Salt.

You will want to add all of the above ingredients to a large stock pot and cook for one hour until everything is well blended and cooked. And then you want to whisk the roux in a little bit at a time until you have added it all to the stock pot.

Now reduce your heat to simmer and let it continue to cook for about 45 minutes.

Now you will want to cook some hot buttered rice and get ready to serve up some of the most delicious gumbo you will ever eat. What you want to do is add a big spoonful of rice to the bottom of each bowl and then add a big ladle of Gumbo over the rice. You can serve with big thick squares of corn bread for a extra tasty treat.

Some people like to wait until the last 30 minutes of cooking time and add their oysters in then. And that is how I usually do it so my oysters don't get over cooked. Yes include all the liquid that came in the container with the oysters.
